One of my favourite homemade soups! This soup is filled with different aromas and flavours that are perfect for the warmer months. This dish takes just under 30 minutes to make.
Ingredients
Butternut Squash
Coconut milk
1-2 a jar of tomato sauce
Garlic powder
Paprika
A tad of cumin
Turmeric
Cinnamon
Romano beans
Celery
Carrots
Onions
Directions
In a pot saute your chopped onions, celery, and carrots.
Once the above vegetables are soft, add in your cut butternut squash and cook for 2 minutes on low-medium heat.
Then add in your coconut milk and tomato sauce to the pot.
Add in water and cook on high until water boils.
Once water boils, bring the heat down to low and add in your herbs and spices .
Once butternut squash is soft, add in your romano beans and cook for another 5 minutes.
