Chickpea Curry Noodles

A wholesome vegetarian recipe that my whole family loves. Made it up on a whim, and as always , this dish is easy to digest that doesn't require a lot of time to make!

Ingredients
Rice Vermicelli noodles
Chickpeas
White onions
Celery
Dried Dill
Coconut milk
Yellow Curry
Paprika
Dried oregano
Dried Parsley
Water
Extra-virgin olive oil
Directions
Chop up onion and celery and place it in a frying pan.
Drizzle olive oil on top and cook for 1-2 minutes until onions become translucent.
Place your chickpeas in the frying pan.
Put a whole carton or can of coconut milk and make sure the chickpeas are covered.
Put dill, oregano, paprika on top of chickpeas.
Cook for 15 minutes on medium-high heat.
Then place cooked chickpeas, celery and onions into a casserole dish.
Place dried vermicelli noodles on top of chickpeas
Sprinkle generously your yellow curry powder on top\
Cover ingredients with water
Place in oven at 350 degrees and cook until noodles are soft and water is almost gone.
