Dandelion Salad & Shrimp Beef Sausage Stir fry

After returning from church, I hurried to prepare a nutritious and satisfying meal for my family and friends. Pressed for time, I needed a quick solution, so I checked the fridge and combined some ingredients in the wok to create this stir fry and an exotic dandelion salad. Everyone loved it, and the entire meal took just twenty minutes to prepare, with everyone requesting seconds. I decided to share the recipe before I forget how I made it.

Ingredients
Dandelion leaves
Romaine lettuce
Apples
Hemp hearts
Lemon
Extra-virgin olive oil
Sea salt
Jasmine Rice
Wild-caught shrimp
Beef Sausage
Frozen Vegetable mix ( broccoli, carrots, red peppers)
Garlic powder
Onion powder
Yellow curry spice
Coconut milk
Hot pepper ( optional)
Directions
Salad
Wash dandelion leaves and romaine lettuce.
Chop them up and place in a bowl.
Peel and cut apples and then place in the bowl.
Sprinkle hemp hearts on top of salad.
Add lemon and extra-virgin olive oil on top.\
Sprinkle sea salt.
Rice
Wash your rice and place in a rice-cooker.
Will be done in 15-20 minutes.
Stir-fry
Place two frying pans/woks on top of a stove.
In one frying pan place your beef sausages and shrimp.
Add in your coconut milk.
Sprinkle your onion and garlic powder on top.
In your second frying pan place your mixed vegetables.
Sprinkle your vegetables with yellow curry powder.
Drizzle olive oil on top of vegetables.
Place lids on top of both woks and cook on high heat for 10 minutes.
Reduce heat to medium-high and cook for another 3-5 minutes.
Place all ingredients into one wok/frying pan.
Serve on top of rice.
