A simple recipe I learnt from my French husband. I tweaked it a bit by adding Shallots. An easy & quick way to intake your vegetables during the fall and winter on any given day.
Ingredients
Sweet Potatoes
Carrots
Shallots
Coriander
Seasalt
Orange juice
Directions
Peel sweet potatoes and carrots and wash them afterwards.
Place them in a pot.
Dice shallots, as many or as little to your liking and place them into the pot.
Cover vegetables with water to make this soup with a thick consistency. Or add more water to make this soup more liquidy.
Bring water to boil, and then lower heat and cook until vegetables are soft.
Once vegetables are soft, blend them an immersion blender.
Add your desired amount of orange juice, sea salt and coriander at the end.
Et voila, ready to serve and enjoy!
