Green Lentil Penne Pasta Salad

Green lentil pasta is my favourite- absolutely delicious and easy to digest! 

I made this often when I was pregnant as it made a difference in my mood and energy levels.

This recipe takes only 20 minutes to make, which is perfect for us busy ladies.





Ingredients

  • Green lentil penne pasta

  • Fresh spinach

  • Cherry tomatoes

  • Hemp hearts

  • Dried oregano

  • Extra-virgin olive oil

  • Lemon

  • Sea salt


Directions

  1. Place pasta in boiling water.

  2. Cook for 2-3 minutes until al dente. ( Alternative pasta takes quicker to cook than traditional wheat pasta).

  3. Strain pasta and put in a bowl.

  4. Drizzle pasta with a little bit of olive oil so it does not stick together.

  5. Place the bowl in the fridge to cool off.

  6. Meanwhile, chop your cherry tomatoes and place in a salad bowl.

  7. Add in spinach, hemp hearts, and oregano.

  8. Add your dressing of olive oil, lemon and a pinch of  sea salt.

  9. Take pasta out of the fridge and mix together with your salad.



            Et Voila! Ready to enjoy. Buon Appetito!
