Green lentil pasta is my favourite- absolutely delicious and easy to digest!
I made this often when I was pregnant as it made a difference in my mood and energy levels.
This recipe takes only 20 minutes to make, which is perfect for us busy ladies.
Ingredients
Green lentil penne pasta
Fresh spinach
Cherry tomatoes
Hemp hearts
Dried oregano
Extra-virgin olive oil
Lemon
Sea salt
Directions
Place pasta in boiling water.
Cook for 2-3 minutes until al dente. ( Alternative pasta takes quicker to cook than traditional wheat pasta).
Strain pasta and put in a bowl.
Drizzle pasta with a little bit of olive oil so it does not stick together.
Place the bowl in the fridge to cool off.
Meanwhile, chop your cherry tomatoes and place in a salad bowl.
Add in spinach, hemp hearts, and oregano.
Add your dressing of olive oil, lemon and a pinch of sea salt.
Take pasta out of the fridge and mix together with your salad.
Et Voila! Ready to enjoy. Buon Appetito!
