Mung Bean Noodle, Shrimp, Cashew, Vegetable Stir- Fry

One of my own made-up recipes! 

Wheat-free, MSG-free, and Egg-free.

 Absolutely delicious and so filling. I cook based on my intuition, therefore the measurements of the ingredients are for yours to explore and custom to your desired taste.

This recipe takes under 30 minutes to cook, Enjoy!




Ingredients

  • Mung bean Noodles

  • Shrimp

  • Bok choy

  • Onions

  • Garlic

  • Raw cashews

  • Mushrooms ( of your choice)

  • Sesame oil

  • Yellow curry spice ( purchase organic yellow curry spice to avoid msg added in)


Directions

  1. Sauté your garlic and onions in a frying pan on low heat with a drizzle of sesame oil.

  2.  Once you see that your onions and garlic are tender and onions are translucent, add in your sliced mushrooms, shrimp, cashews into the pan.

  3. Meanwhile , get a medium-sized pot and bring water to boil.

  4. Add Mung bean noodles into boiling water.

  5. Strain noodles after just a couple of minutes in order for them not to be too soft.

  6. Add bok choy and yellow curry spice to the pan and cook for another 5 minutes.

  7.  Place noodles into a large bowl and add other ingredients in and mix all together.



      Ready to serve. Buon Appetito!
