My Chicken Pho' Soup


I absolutely love Vietnamese food, especially Pho' soups and fresh spring rolls. I make my own version of Chicken Pho soup that is absolutely delicious, healthy and takes under 30 minutes to make. There are so many versions out there, but although I make a few different ones, this recipe is the one I go to make the most often. Very Simple Ingredients. All my kids love this soup and ask me to make it often..




Ingredients


  • Rice Vermcelli noodles

  • Chicken

  • Bok Choy

  • White Onions

  • Celery

  • Carrots

  • Yellow Curry Spice

  • Ginger

  • Olive oil or coconut oil

  • Water





Directions


  1. In a pot place your shaved onions, celery and carrots and sautee them in oil until soft.

  2. Once soft, add in lots of water and bring to boil.

  3. Once boiled reduce heat to medium/high and place your pre-cooked chicken or shavings of raw chicken in water.

  4. Place chopped Bok choy and yellow curry in water.

  5. After chicken in cooked turn off stove heat.

  6. Place noodles in soup and will be ready to serve in the following two minutes.
