I just made this up on a whim this morning and I have to say, that it turned out very well! As you know, we are a wheat-free family, so making the crust took some creativity but was a fun process. As always, I like to eat food that not only nourishes me but is also easy to digest. This recipe fills you but without making you feel like you need to sleep after eating it.

Making this pie took me 30 minutes to make.
