Potato Coconut Curry Soup

Another one of my homemade recipes that my family enjoys. It is one of my go-to soups to make when anyone is feeling under the weather. 

The ingredients are healing, energizing & takes under 30 minutes to make!





Ingredients

  • Potatoes

  • Celery

  • Green cabbage

  • Coriander

  • Green peas

  • Coconut milk

  • Basil

  • Tomatoes ( or add just a bit of tomato sauce)

  • Turmeric

  • Cayenne pepper

  • Yellow onions

  • Fennel seeds

  • Sea salt

  • Yellow curry spice

  • Extra-virgin olive oil or unrefined coconut oil




Directions

  1.  Drizzle a little bit of your olive oil or add a teaspoon of coconut oil to your pot . Turn on low heat for a minute or so.

  2.  Then add your diced celery and onions to your pot.  Sauté until tender. ( takes 2-3 minutes).

  3.  Add in chopped cabbage and cook for another 2-3 minutes.

  4.  Add in your coconut milk and water to fill up your pot to your desired amount.

  5.  Add in your chopped potatoes and bring stove heat to high until water boils.

  6.  Once the water is boiling, reduce to medium heat .

  7. Once potatoes are soft, add in green peas, fennel seeds, coriander, cayenne pepper, sea salt, and yellow curry spice.

  8. Cook for another 5-10 minutes until done.
