This dish is inspired by my mother’s Italian homemade recipe. I added my own little twist to it.
Light and absolutely delicious! It takes only 15 minutes to make.
Ingredients
Rapini (Italian broccoli)
Zucchinis
Tomatoes
Garlic cloves
Navy beans
Extra-virgin olive oil
Lemon
Sea salt
Directions
Drizzle olive oil in a frying pan and sauté your garlic on low heat.
Once garlic is soft, add in your chopped zucchini, tomatoes, and rapini.
Once the above vegetables are soft, add in your navy beans and sea salt.
Cook all ingredients for another 5 minutes.
Transfer vegetables onto a dish and squeeze lemon on top.
Et voila! Ready to enjoy. Buon Appetito!
