T'is the season to eat pumpkin and lots of it! It is so filling and nourishing for our bodies.

Brown lentils are a good alternative to meat as they are made of 25% protein. They are also nutrient dense as they are a great source of iron, magnesium, potassium, zinc, and B vitamins.
This dish isn't only delicious but only takes 30 minutes to make.
Ingredients
Dried brown lentils
Garlic cloves
Celery
Carrots
White onion
Tomato sauce
Dried basil
Dried oregano
Pumpkin
Cinnamon
Dried rosemary
Dried Thyme
Garlic powder
Sea salt
Extra-virgin olive oil
Directions
Chop up onions, garlic, celery and carrots then place in a pot .
Drizzle vegetables with olive oil and cook on low heat.
After 1-2 minutes, add in your dried brown lentils, water, and tomato sauce.
Add in some oregano, garlic powder and basil.
Cook on medium-low temperature for about 30 minutes.
Meanwhile chop up your pumpkin into desired size and place in an oven tray.
Drizzle olive oil, cinnamon , rosemary, thyme and a pinch of seasalt on top.
Mix together then place pumpkin tray in oven and cook on 350 degrees until tender. (usually takes about 30 minutes to cook).
