Ingredients
Sweet Potatoes
Chickpeas
Avocados
Green onions
Cherry tomatoes
Dill
Lemon
Extra-virgin olive oil
Sea salt
Directions
Cut sweet potatoes in halves and place on an oven tray.
Drizzle a little bit of olive oil on the sweet potatoes and place in the oven at 375 degrees. Wait until they are soft to take them out.
Meanwhile, dice your cherry tomatoes, green onions, avocado and put them in a mixing bowl.
Add on your fresh or dried dill, chickpeas, olive oil and lemon and mix all together.
Once your sweet potatoes are ready, place them on a serving tray. Then put your chickpea- avocado salad mix on top.
